I've got a Blackvue DR970x-2ch. The newer version of it is the DR979x-2ch Plus II. This has the Sony Starvis 2 sensor like recommended in other posts. They're very reliable cameras since they don't have batteries in them. Dash Cams with batteries stand a higher chance of exploding in the heat of a parked car. Make sure you use a high endurance micro sd card since the camera deletes the oldest videos as time goes by. The card will have a ton of reads and writes so the basic cards won't cut it. You set the cameras up with your phone and the images from the cameras will show on the screen. This is how you'll align the cameras to make sure they get the best view. Check the videos on the card or the live feed from the cameras from time to time to make sure everything is still working.

Big fan of BlackVue DR970X-2CH Plus 64GB | 2-Channel Dash Cam (4K-Full HD), ~$380 on Amazon USA. Paired with j28 / blendmount mirror mount. Also jerry rigged a mount for my uniden r8 radar with blendmount mirror tap. Very clean setup everything tucked away. Dash cam is setup with a 1tb sd card. Video footage has saved me from a rear end accident where a motorcyclist approaching from my rear was clipped by another car behind me and said motorcyclist crashed into my rear hatch glass. Handed 1tb card to CHP at the scene and footage absolved me of any fault.
I have the BlackVue DR970X-2CH and it has the ability to remote live stream. It also has a setting to let you open your stream for others to view, so you could watch some other people's streams to get an idea of whether or not it would be what you want.
I recently got the BlackVue DR970X-2CH Plus. It has a parking mode option where you can set it to take an image every second, which I think would satisfy your need in this case.

For great cloud connectivity and remote live viewin, I bought a Blackvue DR970X-2CH LTE PLUS for my 23 Forester Wilderness and had Best Buy geek squad install it for $100 ..but they won't install dash cameras that have a screen on them because of safety reasons and I'm glad I didn't get one of those.

I run BlackVue DR970X-LTE 2 channel hardwired in mine. Also used the same add-a-fuse for my Uniden R8. BlackVue has served me well. Love the parking mode as well as the LTE connection. The process was pretty easy.
Lots of people will suggest Fitcam, but if you want quality go with Thinkware or Blackvue. They are reputable Korean brands and well-known in the dash cam world. I have a DR970X-2CH LTE Plus. I can connect to it at any time from my phone and view a live feed of the front and my truck bed.
I recently got a blackvue dr970x plus lte previously had a nextbase gw360 which I found useless
I like the constant recording, I changed after somebody hit my car whilst park, the next base turned on but took about 10 seconds before video. Fortunately it got the side of the car from the rear and a good shot of the guy inspecting the damage before he fucked off… From a test with the BV it would have got the car from the front when he entered the car park in its line of sight. Only thing I find bad is the cost of the sd cards in the uk, the 1/2tb is ~$100 whilst the 256gb is £190… I did try a Samsung pro endurance but it didn’t like it causing glitches. The other one I considered was the thinkware.
I went with a blackvue 970x lte. Had a nextbase fitted when I brought the car by the dealer, got it removed after I was hit in a car park and the footage started about 8 seconds after impact… just getting the footage off was annoying.
