I found SleepEz through Reddit and ordered and still love my hybrid mattress from there. I can’t speak to their all latex options but agree with the other commenter that you should try an all latex option (or a hybrid) before buying if possible just to get a sense of what you’re looking for.
I would recommend the SOL hybrid with split talalay toppers from sleep ez I would get a 3” soft talalay for your side and a 3” medium talalay for his side. My husband and I have a similar weight to you and yours and this is what we ended up with after many trials.
After we got the Talalay topper yes, the SOL mattress is very well made but very hard. You need something to soften it up.
I would say the motion transfer is minimal especially if you have a split topper. I don’t feel my husband move. The mattress is very heavy but the delivery instructions on the box say that it needs to be unboxed in the room it will go so the Fed Ex delivery people brought it into the room unpacked it and removed the packaging. We ended up paying someone $100 to remove our old mattress once we decided we were keeping the new one. If you call Sleep Ez and ask them to split the queen topper they should be able to do it. You’ll probably have to call and speak to someone and explain you want one side soft and the other medium. They are great to work with. I highly recommend you get a talalay topper. The SOL hybrid will be way too hard just by itself. Hope this helps!

Sleep EZ hybrid owner over here, it’s so PERFECT
Really love our sleepez hybrid latex mattress. It’s what we got when we needed to upgrade to a king and couldn’t spend the money on avocado or other brands with sticker shock.
We love our sleepez hybrid mattress we got this summer when upgrading to a king. I went down too many rabbit holes and it was exhausting… don’t do it!
So this is likely a side effect of having polyester in your mattress topper, in the foam below or a combination of both. The simplest way to improve that is getting a new bed without polyester fill. A bed with a wool and cotton topper and a natural rubber foam pad will breathe. I bought a mattress from [sleepez](https://sleepez.com/product/hybrid-latex-mattress/?srsltid=AfmBOooYo8nfff5JNXLNOKXfUV48BJhKbohgrzT0eoq1tRkAUYmUHQiv) maybe 4-5 years ago and I’ve had zero issues. They’re having a sale too. Worth a look. No matter what brand you decide on be sure to verify what materials are used. If it isn’t disclosed you can be sure it man made and likely will not breath.
I got a cheap 8" zinus memory foam mattress ($200 )about 6 years ago for the guest room. People still love it. I also got a more expensive ($1200) sleepez latex hybrid mattress that is pretty awesome as well. It's quality materials. I recommend the latex hybrid or a get a cheap zinus or novella or lucid from Amazon. The more you spend or dwell on the decision, you'll find more faults with it.
I’m not sure but I ordered a SleepEZ hybrid mattress a few years ago and I LOVE it. Not a sponsor or anything, I just did a lot of research before I purchased because honestly, mattress buying is one of the 10 circles of hell. They’re a mid-priced solution and apparently beloved on the mattress subreddit as well. I ordered without testing and I still love it 5 years later.
Sleep ez hybrid with firm Dunlop on top- I’ve had it for two years so far and it’s been great!
Currently trying SleepEZ latex hybrid. Not liking the coils. Too bouncy for us. Going to switch to all-latex.
